The Private Table: A5 Wagyu

Some evenings are not meant to be scaled. The Private Table is a new series at Basalt built on that idea — one long table, twelve seats, and a menu that exists for a single night before it is retired.

The first of the series is given entirely to A5 wagyu.

The Beef

A5 is the highest grade Japan awards, and it is awarded sparingly. What earns it is marbling — fat woven so finely through the muscle that it reads like frost across the surface, and melts near the temperature of your hand. Our striploin carries a BMS of 12, the top of the marbling scale.

It is beef that asks for restraint. Our kitchen gives it fire, salt, and very little else, then gets out of the way

The Experience

Dinner is coursed and served at one table. Five courses move in sequence — a tartare tart to begin, nigiri, a bowl of miso, a wagyu sando pressed with tonkatsu, then the striploin itself over flame, and taiyaki to close. A calamansi and shiso granita resets the palate before the main event.

Our sommelier pours alongside, course by course, with a pairing chosen for each plate — a Pinot Blanc bright enough to cut the richness of the nigiri, a Nebbiolo firm enough to stand against the fat of the sando, a Gamay Noir that meets the kimchi head-on. The pairing is optional; the menu stands on its own.
